Osmanthus Drunken Abalone
材料:(四人分量)
大連鮮鮑魚 9 - 10 隻
Ingredients : (4 person portion)
Dalian fresh abalone 9 - 10 pieces
醃料:
紹興酒 227 克
醉雞汁 227 克
鹽 1/2 茶匙
桂花糖 1 茶匙
蒸鮑魚汁 28 克
Marinade:
Shaoxing wine 227 g
Drunken chicken juice 227 g
Salt 1/2 tsp
Osmanthus suger 1 tsp
Steam abalone juice 28 g
做法:
- 鮑魚用小刀輕輕從殼鎅出,用豆粉醃數分鐘後,用牙刷及暖水輕手洗淨同時清除內臟,再用小刀將底部鎅菱形,不用鎅太深,待用。
- 燒水一鍋,將鮑魚蒸約5分鐘,取出,放涼待凍。
- 將醉雞汁拌勻,加入已放涼的蒸鮑魚汁,然後將鮑魚放入汁內,浸2 天即可食用 (如果天氣太熱可放入雪櫃以防變壞)。
Method :
- Use a small knife to gently carve the inside of the abalone shell in order to remove the abalone from the shell. Apply a little cornstarch to marinade the abalone for few minutes, then use a toothbrush and warm water to gently wash the abalone and remove the dark intestines. After cleaning, use a small knife to carve lightly on the bottom side of each abalone into diamond shape, no need to carve too deep. Put aside.
- Boil water in a pot, steam all abalones for 5 minutes. Remove from pot, put aside to cool down.
- Mix well the drunken chicken juice and add the cooled down steam abalone juice. Soak the abalone in the mixed sauce for 2 days (if weather is hot, put in refridgerator to prevent food from going bad), ready to serve.
